Pita Pocket Pete: Saturday Sandwiches

Pita pockets (each pocket is an average of 90 calories) are healthier, and less calories than bread. And usually, what you stuff into the pita pocket is healthier as well.

Take a break from bread. Pick a Pita Pocket Pete instead. You can make homemade pita here.

There are two ways of stuffing your pockets full of pita goodness. You can either premix all of the ingredients and spread that in with a spoon, or you can stuff the ingredients in one at a time.

First, you need a good spread or dressing. One delicious option is to include a homemade hummus spread. Mmmm... hummus is yummus. And I've given you recipes before for Pish Posh Aioli and Pish Posh Vinaigrette, but now let's talk a little Greek Cheese. Feta (which is mostly sheep's cheese, don't think about it, just eat it) goes oh so well with Vinaigrette in salads. But for my pita pockets, I like to use the creamier, moister goat's cheese (if you're not down with trying something new, you can just use cream cheese) I generously spread this inside the pocket.
Veggie Pita: (you're looking for a combination of spice, crunch, and juice here, so choose wisely)
  • Red onions - minced
  • Cucumbers - diced
  • Tomatoes - diced
  • Pine nuts - lightly toasted
  • Bean sprouts - not everyone likes alfalfa as much as me.

    Other options include:
  • Romaine lettuce, black olives, tomatoes - plain - for the person who orders a Taco Salad at a Mexican restaurant
  • Mushrooms, black olives, tomatoes, red onions - medium - for a slightly different taste
  • Red peppers, green or kalamata olives, toasted pine nuts, red onions, cucumbers - yummy - for the more Mediterranean

Meaty Pete
Here are some meat-pockets I make, and I usually lightly heat, roast, or grill the pocket too.

Hot meat sandwiches (get your mind out of the gutter):
  • Lemon-lamb
    • Saute garlic and onions. Add strips of lamb or beef (pre-marinated is even better) and cook until just barely tender. Add chopped tomatoes, lemon juice, parsley, cayenne pepper (pinch), salt (pinches), red-wine vinegar (splash) and let the juices seep into the meat. Simmer about 15 minutes. Add lightly toasted pine nuts, and voila. If you'd like a little more sauce, add lemon juice and Greek-style yogurt.
  • Curried Chicken/beef (sear meat in a sauce of curry, cayenne, cumin, yogurt, lemon, mayo)
  • Carne-Asada (You'll have to wait. I make freaking delicious carne-asada. Really).
  • Philly cheese steak (Grilled Beef, Onions, Peppers, Cheese)
  • Chicken Caesar (Romaine, Parmesan, Caesar, Grilled Chicken, Bacon)
Cold meat sandwiches:
  • Tuna (add some pickle, celery, or cucumber for crunch)
  • Club
  • Dagwood
  • BLT
Be a little adventurous. Try goat's cheese. Try it with hummus and roasted peppers. Mix it up. Try it with falafel and cucumber sauce.

Love pita bread!  These are brilliant ideas...  My mom used to send us to school with pita bread filled with Italian tomato sauce and cheese - just like a little pizza pocket.  It was a great meal to find in my lunch box - and was one that I really enjoyed.  A couple of years ago I was visiting friends in London - and I made one of these pizza pockets. They were very impressed and started doing the same ;-).... such a simple and obvious idea, but for some reason it had never occurred to them until that day.   Thank you for more yummy ideas!

I do like pitas so it would probably be good to get into the habit of switching my sandwiches over to its lower calorie/carby confines.

I was hoping for something awesome for Saturday Sandwiches and you delivered. My kids are off from school for spring break next week and with my wife working some long hours these days, i needed some lunch ideas. Definately going to try to mix in some pita pockets. I might even do some up for supper one night. My wife is always appreciative if i have time to get something on the table when she gets home. (although, that doesn't seem to happen as often as i would like.)

We have a Greek restaurant in town and I love their pita bread. I have never tried to make my own. I need to try it.

 Still got some high carbs, apparently, but lower calorie. As long as it's mixed with protein it should be great.

I'm a little behind on the sandwiches...today I'm going to eat a fried egg sandwich. I just ran 8 miles in preparation for my race next weekend, and after I eat I plan on passing out for the rest of the day. Sometimes I think I only run in exchange for eating bread. I love sandwiches, but bread loves me a little too much, it coats me in extra layers and never leaves.

Enter pita???

I didn't realized Pita Pockets were better for you....i will have to try it.  I have been searching the web for hummus recipes...have no idea what it is.  And what is tahini?  it says you have to have this and can't substitute it with anything.  I will go back through your sandwich posts and jot down some recipes.  I'm sure you have a delicious hummus spread already posted....i will find it.

 Well whole wheat pitas are good, and still have carbs, but are often lower calorie, and also make a nice change.

Okay so before you make hummus you need to try it! It's one of my favorite things. I don't have a recipe written down but I will post one soon for you. For example: 2tbsp of peanut butter is almost 200 calories! 2tbsp of hummus is 80 calories!

Anyway hummus is a middle-eastern spread made from chickpeas (garbanzo beans), tahini (sesame paste), olive oil, lemon, and garlic - then some people add other flavors and herbs. Try it from the store first. You can eat it with pita, wraps, carrots, bell peppers, crackers, etc. It's an acquired taste but if you find a good, fresh hummus that is creamy and has a bit of oil in it (not whipped), seriously it is SO good. Anyway, I use it to spread on sandwiches instead of peanut butter or mayo or cheese.

I'll make a hummus, bread, sprouts, avocado and tomato sandwich tomorrow for example :)

 Also my tastes are such that I don't like things like iceberg lettuce, black olives, beef tomatoes, colby cheese, ranch, white bread, miracle whip and so forth - things I find are very midwestern!

Instead I like like spinach, kalamata olives or garlic stuffed green olives, cherry tomatoes, feta cheese, balsamic vinegar, sourdough, dijon, and so on instead of those things above. So I will admit not everyone likes the same things. But try hummus with some warmed up pita slices and I think you will enjoy!!
